To make Pan Seared Salmon, you'll need:
  • 4 salmon fillets, approx. 200g each, skinned 
  • 1 large red onion, peeled and sliced finely 
  • 200g cherry tomatoes 
  • 6 cloves garlic, peeled and chopped finely 
  • 1 tbsp. extra virgin olive oil 
  • ½ a medium sized lemon 
  • Salt and freshly ground pepper 

Method

  • Preheat the oven to 200°C/Gas Mark 6.
  • Lightly oil a baking tray.
  • Spread the fennel, onion, tomatoes and garlic in an even layer on the bottom of the baking tray
  • Place the trout in the baking tray, then spread the thyme, lemon juice and rind over the top.
  • Season with freshly ground pepper and salt.
  • Cook in the oven for 15 minutes.
  • Remove from the oven and squeeze the two lemon halves over the salmon and sprinkle with the remainder of the salt and pepper.
  • Return the roasting pan to the oven and roast for another 10 minutes and serve.
