Pan Seared Salmon

Ingredients
To make Pan Seared Salmon, you'll need:
- 4 salmon fillets, approx. 200g each, skinned
- 1 large red onion, peeled and sliced finely
- 200g cherry tomatoes
- 6 cloves garlic, peeled and chopped finely
- 1 tbsp. extra virgin olive oil
- ½ a medium sized lemon
- Salt and freshly ground pepper
Method
- Preheat the oven to 200°C/Gas Mark 6.
- Lightly oil a baking tray.
- Spread the fennel, onion, tomatoes and garlic in an even layer on the bottom of the baking tray
- Place the trout in the baking tray, then spread the thyme, lemon juice and rind over the top.
- Season with freshly ground pepper and salt.
- Cook in the oven for 15 minutes.
- Remove from the oven and squeeze the two lemon halves over the salmon and sprinkle with the remainder of the salt and pepper.
- Return the roasting pan to the oven and roast for another 10 minutes and serve.
