To make Peppery Cod with Mixed Veg, you'll need:
  • 500g asparagus 
  • 100g sun dried tomatoes 
  • 8 x 200g cod fillets 
  • 3 tbsp. olive oil 
  • Salt and freshly ground pepper to taste

Method

  • Preheat the oven to Gas Mark 6 or 200°C. 
  • Steam the asparagus for 3 minutes and set aside. 
  • Rub both sides of the cod fillets with salt and place them on a baking tray. 
  • Drizzle with olive oil and bake for 15 minutes. 
  • Serve the cod fillets along with the asparagus, on bed of mixed salad and sun dried tomatoes. 
  • Sprinkle the fish with some freshly ground pepper and serve immediately!
