To make Poached Eggs on Spinach, you'll need:
  • 200g spinach 
  • 8 large free range eggs 
  • ½ tbsp. vegetable oil 
  • Himalayan sea salt and black pepper, to taste 

Method

  • Fill a saucepan to roughly half way with water, and place it over a medium heat until it begins to boil.
  • When the water is boiling, crack the egg and pour it into the saucepan, ensuring that it’s fully submerged.
  • The egg will take 1-2 minutes to poach.
  • Whilst the eggs are poaching, cook the spinach in a frying pan with a little olive oil for 3 minutes. 
  • Place the wilted spinach on a serving plate, topped with egg.
  • Breakfast is served!
