Poached Eggs on Spinach

Ingredients
To make Poached Eggs on Spinach, you'll need:
- 200g spinach
- 8 large free range eggs
- ½ tbsp. vegetable oil
- Himalayan sea salt and black pepper, to taste
Method
- Fill a saucepan to roughly half way with water, and place it over a medium heat until it begins to boil.
- When the water is boiling, crack the egg and pour it into the saucepan, ensuring that it’s fully submerged.
- The egg will take 1-2 minutes to poach.
- Whilst the eggs are poaching, cook the spinach in a frying pan with a little olive oil for 3 minutes.
- Place the wilted spinach on a serving plate, topped with egg.
- Breakfast is served!
