To make Potato Creole, you'll need:
  • 1/4 cup Vegetable oil
  • 3 Potatoes peeled and sliced
  • 1 Onion sliced
  • 2 cup Tomatoes chopped Salt and freshly ground Black pepper to taste
  • 1 tsp Dried thyme Pinch cayenne pepper

Method

  • Heat the oil in a large skillet on medium heat.
  • Add the potatoes and onion and saute for 10 minutes.
  • Add the tomatoes salt pepper thyme and cayenne.
  • Bring to a boil then reduce the heat cover and simmer for 30 minutes or until the potatoes are tender and the sauce has thickened.
