To make Pumpkin Pie 1 - Diet, you'll need:
  • 1 each
  • 16 oz can solid-pack pumokin - NOT PUMPKIN PIE FILLING
  • 1 each
  • 13 oz can evaporated skim milk
  • 1 each Egg or egg substitute equal to one egg
  • 2 each Egg whites
  • 1/2 cup Biscuit mix - Bisquick now makes low-fat version
  • 2 tbsp Sugar
  • 8 package Sugar substitute
  • 2 tsp Pumpkin pie spice
  • 2 tsp Vanilla extract

Method

  • Heat oven to 350 degrees F
  • Lightly grease a 9 inch pie plate - or spray with Pam
  • Place all ingredients in blender food processor or large mixing bowl
  • Blend 1 minute or beat 2 minutes with mixer
  • Pour into pie pan and bake for 50 minutes or until center is puffed up
  • Yield: 8 serving
