Ingredients
To make Ranch Potato Salad, you'll need:
  • 3 medium russet potatoes peeled cubed
  • 1/4 cup low-fat mayonnaise
  • 1/2 cup fat-free ranch salad dressing
  • 3/4 cup diced celery
  • 1/2 cup thawed frozen peas
  • 1 tsp paprika
  • 1/4 cup chopped scallions Salt to taste Freshly-ground black pepper to taste

Method

  • Boil the potatoes for 10 to 15 minutes until tender
  • Drain and set aside.
