To make Roasted Potato Medley, you'll need:
  • 1 medium russet potato cut
  • 2" cubes
  • 1 medium red potato cut
  • 2" cubes
  • 1 medium sweet potato cut
  • 2" cubes
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp minced thyme
  • 3 garlic cloves minced
  • 1/4 cup low-sodium low-fat chicken broth

Method

  • Preheat the oven to 375 degrees
  • In a bowl combine all ingredients
  • Toss well to coat.
