To make Salmon Summer Salad, you'll need:
  • 1 lb salmon fillet poached or grilled
  • 1/2 lb small red-skinned potatoes scrubbed
  • 3/4 lb fresh thin asparagus
  • 6 tbsp fresh lemon juice
  • 2 tsp minced lemon zest
  • 1/4 cup plain nonfat yogurt
  • 1 large garlic clove minced
  • 2 tsp capers rinsed well drained
  • 3 tbsp finely-chopped fresh dill
  • 2 tbsp finely-chopped parsley
  • 1/4 tsp salt (optional)
  • 1/8 tsp freshly-ground black pepper
  • 8 red-leaf lettuce leaves rinsed crisped
  • 12 cherry tomatoes

Method

  • Into a large bowl break up the salmon in 1/2-inch pieces
  • Set aside.
