Smoked Mackerel Salad

Ingredients
To make Smoked Mackerel Salad, you'll need:
- 600g smoked mackerel with crushed peppercorns
- 300g chargrilled red peppers in olive oil
- 8 hard boiled eggs, shelled and halved
- 400g green beans
- 100g pitted black olives
- 100g cherry tomatoes, halved
- 1 romaine lettuce heart, sliced
- 4 tbsp. olive oil
- Juice of a lemon
Method
- Put the smoked mackerel in a bowl, and break it up into chunks.
- Slice the peppers into strips, and mix in the mackerel.
- Add in the eggs, beans, olives, and tomatoes.
- Toss the entire mixture.
- Divide the lettuce among four plates and pop the mackerel on top.
- Combine the olive oil and lemon juice and drizzle over the salad.
- The dish is ready to serve.
