To make Smoked Mackerel Salad, you'll need:
  • 600g smoked mackerel with crushed peppercorns
  • 300g chargrilled red peppers in olive  oil
  • 8 hard boiled eggs, shelled and halved
  • 400g green beans
  • 100g pitted black olives
  • 100g cherry tomatoes, halved
  • 1 romaine lettuce heart, sliced
  • 4 tbsp. olive oil
  • Juice of a lemon

Method

  • Put the smoked mackerel in a bowl, and break it up into chunks.
  • Slice the peppers into strips, and mix in the mackerel.
  • Add in the eggs, beans, olives, and tomatoes.
  • Toss the entire mixture.
  • Divide the lettuce among four plates and pop the mackerel on top.
  • Combine the olive oil and lemon juice and drizzle over the salad.
  • The dish is ready to serve.
