Spicy Beef Stew

Ingredients
To make Spicy Beef Stew, you'll need:
- 2 tbsp. vegetable oil
- 1 medium onion, finely chopped
- 3 garlic cloves, finely chopped
- 1 green chilli, finely chopped
- 2 medium red bell peppers, sliced
- 1 celery stick, sliced
- 500g lean beef mince
- 400g tinned tomatoes
- 400g cannellini beans
- 1 tbsp. fresh coriander
- Salt and freshly ground pepper to taste
Method
- Pop the vegetable oil in a large saucepan on a medium heat and fry the onions for 3 minutes.
- Throw in the garlic and chilli and cook another 2 minutes.
- Mix in the red bell peppers and celery and cook for 4 minutes.
- Place the lean beef mince in the pan and brown in all over. This takes about 4-5 minutes.
- Then pour in the tomatoes and beans. Turn down the heat and simmer for 20 minutes.
- Serve with a side of salsa and brown basmati rice.
