To make Spicy Beef Stew, you'll need:
  • 2 tbsp. vegetable oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 green chilli, finely chopped
  • 2 medium red bell peppers, sliced
  • 1 celery stick, sliced
  • 500g lean beef mince
  • 400g tinned tomatoes
  • 400g cannellini beans
  • 1 tbsp. fresh coriander
  • Salt and freshly ground pepper to taste

Method

  • Pop the vegetable oil in a large saucepan on a medium heat and fry the onions for 3 minutes.
  • Throw in the garlic and chilli and cook another 2 minutes.
  • Mix in the red bell peppers and celery and cook for 4 minutes.
  • Place the lean beef mince in the pan and brown in all over. This takes about 4-5 minutes.
  • Then pour in the tomatoes and beans. Turn down the heat and simmer for 20 minutes.
  • Serve with a side of salsa and brown basmati rice.
  • Truely delectable!
