Spicy Moroccan Veg

Ingredients
To make Spicy Moroccan Veg, you'll need:
- 2 courgettes, cut into chunks
- 1 red pepper, chopped
- 1 green pepper, chopped
- 200g aubergine, diced
- 2.5 tbsp. olive oil
- 1 tbsp. Harissa paste
- Salt and freshly ground pepper to taste
- 200g couscous
Method
- Preheat the oven on Gas Mark 6 or 200°C.
- Place the courgettes, peppers, and aubergine on a baking tray.
- Mix the vegetables with the olive oil and Harissa paste; add salt and pepper to taste.
- Toss all the vegetables and roast in the preheated oven for 25 minutes.
- Place the couscous in a bowl, and pour 400ml boiling water over the top.
- Leave it to rest for 10 minutes.
- Serve the vegetables on a bed of the couscous and enjoy!
