Ingredients
To make Spicy Moroccan Veg, you'll need:
  • 2 courgettes, cut into chunks
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 200g aubergine, diced
  • 2.5 tbsp. olive oil
  • 1 tbsp. Harissa paste
  • Salt and freshly ground pepper to taste
  • 200g couscous

Method

  • Preheat the oven on Gas Mark 6 or 200°C.
  • Place the courgettes, peppers, and aubergine on a baking tray.
  • Mix the vegetables with the olive oil and Harissa paste; add salt and pepper to taste.
  • Toss all the vegetables and roast in the preheated oven for 25 minutes.
  • Place the couscous in a bowl, and pour 400ml boiling water over the top. 
  • Leave it to rest for 10 minutes.
  • Serve the vegetables on a bed of the couscous and enjoy!
