Spicy Parsnip Soup

Ingredients
To make Spicy Parsnip Soup, you'll need:
- 1 medium potato
- 700g parsnips
- An onion, finely chopped
- 1½ tsp. ground turmeric
- 2 tsp. cumin seeds
- 1 tsp. black mustard seeds
- ½ tbsp. ground ginger
- 4 cloves of garlic, finely chopped
- 1 tbsp. fresh lemon juice
- 1 litre of vegetable stock
- 275ml of natural low fat yoghurt
- 1½ tsp. ground coriander
- Fresh parsley to sprinkle
- Freshly ground nutmeg to garnish
Method
- Put the potato, parsnips, and onion in a pan with 50ml of water.
- Bring the water to the boil, turn the heat down, and cook the mixture for another 10 minutes.
- Add the spices, ginger, garlic, and lemon juice.
- Stir thoroughly and cook for a further 2 minutes.
- Pour in the stock.
- Bring the mixture to the boil, cover and simmer for around 15 minutes.
- Whizz the mixture in the blender and place back in the pan.
- Next, stir in the yoghurt, season with coriander, and serve with a garnish of fresh parsley and a sprinkle of ground nutmeg.
