To make Spinach and Feta Rolls , you'll need:
FOR THE DOUGH:
  • 250g whole wheat flour 
  • 40g wheat gluten 
  • Pinch of salt 
  • 100ml whole milk, lukewarm 
  • 100ml water, lukewarm 
  • 1 packet of yeast 
  • 1 large egg, lightly beaten
FOR THE FILLING:
  • 330g spinach 
  • 125g crumbled feta cheese 
  • ½ tsp. marjoram
  • Pinch of salt 
  • Pinch of freshly ground pepper

Method

  • Preheat the oven to 140°c or Gas Mark 1 for 10 minutes and then turn oven off.
  • In a medium bowl, stir together the wholewheat flour, gluten, and salt. 
  • Set this mixture to one side.
  • Combine the milk and water in the bowl of your mixer.
  • Then, sprinkle on the yeast and mix well. 
  • Add the egg into this mixture, until it is fully combined. 
  • Add in the flour mixture until properly combined.
  • Grease your hands, shape the dough into a smooth ball, and place in a lightly greased bowl. 
  • Cover the bowl with foil and place in a warm oven for 30-45 minutes, or until it has doubled in size.
  • Mix the spinach, feta, marjoram, salt, and pepper together in a separate bowl.
  • Roll out the dough on a lightly floured surface into a rough rectangle, approximately 12 x 16 inches. 
  • Spread the spinach mixture over the dough, leaving a ½ inch border around all edges.
  • Starting at the longer side, roll up the dough tightly into a log and pinch to seal the edge.
  • Cut this log into 16 equal portions and place on baking parchment. It may be easier to use a serrated knife.
  • Preheat the oven to 190°c or Gas Mark 5. 
  • Then bake the rolls for 18-20 minutes or until golden brown. 
  • Let the rolls cool slightly and serve.
