To make Spooky Potion Pancakes , you'll need:
For the Pancakes:
  • 150g almond flour
  • ½ tsp. bicarbonate of soda
  • 1 medium egg
  • 160ml milk
  • 40g melted butter
  • 3 tsp. green food colouring
  • 1 small eating apple, peeled, cored and grated
  • 4 tbsp. vegetable oil
For the Spooky Potion:
  • 40g unsalted butter
  • 2 tsp. honey
  • 1 tsp. cinnamon
  • 2 tsp. black food colouring

Method

For the Pancakes:
  • Mix the almond flour and the bicarbonate of soda in a bowl.
  • Stir in the egg, milk, melted butter and green food colouring to form a smooth mixture. 
  • Next, add the grated apple and mix thoroughly.
  • Pour a tablespoon of oil into a medium sized frying pan. 
  • Add an eighth of the mixture into the pan and cook for 3 minutes until bubbles appear and the underneath of the pancake is cooked and turns a golden brown.
  • Flip the pancake over and cook for another 2-3 minutes. 
  • Repeat the process until you have made all 8 pancakes.
For the Spooky Potion:
  • Melt the unsalted butter in a small saucepan. 
  • Add in the honey, cinnamon and food colouring.
  • To plate up, serve the pancakes with a generous drizzle of the Spooky Potion and a scattering of blueberries.
