To make Summer Berry Souffles, you'll need:
  • 420g organic raspberries
  • 210g organic blackberries
  • 2 tsp organic arrowroot
  • 3 large organic egg whites
  • 210g Zsweet® All Natural
  • 1 tsp organic vanilla extract
  • 1 tsp fresh organic lemon juice
  • 30g organic, unsalted pistachios, chopped
  • 60ml spring water

Method

  • Preheat oven to 400F/200C fan assisted oven, gas mark 6.
  • In a medium saucepan, combine raspberries and blackberries with 115g Zsweet® All Natural, vanilla and lemon juice.
  • Bring to a simmer over medium heat, stirring often.
  • Add arrowroot and continue to stir until thickened, about 1 minute.
  • In a large bowl, beat the egg whites until they form soft peaks.
  • Gradually add in the remaining Zsweet® All Natural, 2 tbsp at a time, and continue to beat for about 3 minutes.
  • Gently swirl in 175ml of the berry mixture, leaving streaks in the egg whites.
  • Spoon remaining berry mixtures into six ramekin dishes.
  • Top with the souffle mixture, sprinkle with pistachios, and bake until golden on top, about 6 minutes.
