Summer Berry Souffles

Ingredients
To make Summer Berry Souffles, you'll need:
- 420g organic raspberries
- 210g organic blackberries
- 2 tsp organic arrowroot
- 3 large organic egg whites
- 210g Zsweet® All Natural
- 1 tsp organic vanilla extract
- 1 tsp fresh organic lemon juice
- 30g organic, unsalted pistachios, chopped
- 60ml spring water
Method
- Preheat oven to 400F/200C fan assisted oven, gas mark 6.
- In a medium saucepan, combine raspberries and blackberries with 115g Zsweet® All Natural, vanilla and lemon juice.
- Bring to a simmer over medium heat, stirring often.
- Add arrowroot and continue to stir until thickened, about 1 minute.
- In a large bowl, beat the egg whites until they form soft peaks.
- Gradually add in the remaining Zsweet® All Natural, 2 tbsp at a time, and continue to beat for about 3 minutes.
- Gently swirl in 175ml of the berry mixture, leaving streaks in the egg whites.
- Spoon remaining berry mixtures into six ramekin dishes.
- Top with the souffle mixture, sprinkle with pistachios, and bake until golden on top, about 6 minutes.
