To make Tangy Trout Treats , you'll need:
  • 800g trout fillets, boneless 
  • Juice and rind of a lemon 
  • 250g of green beans, cut into inch thins 
  • 4 spring onions, chopped into small pieces 
  • 1 tbsp. Dijon mustard 
  • 1 tbsp. runny honey 
  • 1 tbsp. light soy sauce 
  • 2 tbsp. vegetable oil 

Method

  • Preheat the oven to Gas Mark 6 or 200°C.
  • Lightly oil a baking tray. Place the trout on it and spread the lemon juice and rind on top.
  • Season with freshly ground pepper and salt and cook for 15 minutes.
  • Cook the green beans in boiling water for 3 minutes.
  • Once cooked, drain and pop in a bowl.
  • Mix in the chopped spring onions.
  • In a small bowl, combine the mustard, honey and soy sauce.
  • Add in the green beans and onions, and serve with the trout.
