Tangy Trout Treats

Ingredients
To make Tangy Trout Treats , you'll need:
- 800g trout fillets, boneless
- Juice and rind of a lemon
- 250g of green beans, cut into inch thins
- 4 spring onions, chopped into small pieces
- 1 tbsp. Dijon mustard
- 1 tbsp. runny honey
- 1 tbsp. light soy sauce
- 2 tbsp. vegetable oil
Method
- Preheat the oven to Gas Mark 6 or 200°C.
- Lightly oil a baking tray. Place the trout on it and spread the lemon juice and rind on top.
- Season with freshly ground pepper and salt and cook for 15 minutes.
- Cook the green beans in boiling water for 3 minutes.
- Once cooked, drain and pop in a bowl.
- Mix in the chopped spring onions.
- In a small bowl, combine the mustard, honey and soy sauce.
- Add in the green beans and onions, and serve with the trout.
