To make Thai Green Soup, you'll need:
  • 50ml olive oil 
  • An onion, finely chopped 
  • 3 garlic cloves, finely chopped  
  • 1 celery stick, finely chopped 
  • 1 courgette, roughly chopped 
  • A broccoli head, chopped 
  • 1.5l vegetable stock 
  • 120g green beans, chopped 
  • 120g green peas 
  • 120g asparagus, trimmed and sliced into inch long pieces 
  • 100g spinach leaves 

Method

  • Heat up the olive oil in a pan and fry the onion, garlic and celery until they have slightly browned. 
  • Add in the courgette and broccoli; cook for 5 minutes. 
  • Pour the stock in and bring the entire mixture to the boil.
  • Simmer for a few minutes and stir in the green beans, peas, asparagus and spinach. 
  • Simmer for another 5 minutes until the vegetables are cooked through. 
  • Season with salt and freshly ground black pepper. 
  • Whizz in a blender and serve!
