Thai Green Soup

Ingredients
To make Thai Green Soup, you'll need:
- 50ml olive oil
- An onion, finely chopped
- 3 garlic cloves, finely chopped
- 1 celery stick, finely chopped
- 1 courgette, roughly chopped
- A broccoli head, chopped
- 1.5l vegetable stock
- 120g green beans, chopped
- 120g green peas
- 120g asparagus, trimmed and sliced into inch long pieces
- 100g spinach leaves
Method
- Heat up the olive oil in a pan and fry the onion, garlic and celery until they have slightly browned.
- Add in the courgette and broccoli; cook for 5 minutes.
- Pour the stock in and bring the entire mixture to the boil.
- Simmer for a few minutes and stir in the green beans, peas, asparagus and spinach.
- Simmer for another 5 minutes until the vegetables are cooked through.
- Season with salt and freshly ground black pepper.
- Whizz in a blender and serve!
