To make Three Veg Tortilla, you'll need:
  • 400g white onions, finely chopped 
  • 6 large eggs 
  • 100g spinach, finely chopped 
  • 100g potatoes 
  • 1 tbsp. olive oil 
  • Juice and zest of a lemon 

Method

  • Peel the potatoes and put them in boiling water. 
  • Lower heat and simmer for 15 minutes.
  • Drain and when cool, dice them into small pieces.
  • For the next stage place two tablespoons of olive oil in a large frying pan on a low heat.
  • Cook the onions on a low heat until they soften. This should take around 5 minutes.
  • Beat the eggs with a pinch of salt and pepper.
  • Turn the heat up under the onions and cook for 4 minutes. 
  • Add the spinach and potatoes and fry for a couple of minutes.
  • Stir in the eggs and cook for around 5 minutes. 
  • Next, transfer the eggs to a pre heated grill and cook for 5-8 minutes until the eggs are golden. 
  • The dish can now be served hot or eaten cold.
