To make Tomato Pastina Soup, you'll need:
  • 2 tsp olive oil
  • 2/3 cup coarsely-chopped green bell pepper
  • 1/2 cup coarsely-chopped onion
  • 1/2 cup coarsely-chopped cucumber
  • 3 garlic cloves minced
  • 1
  • 1/2 lb fresh tomatoes coarsely chopped
  • 1 can whole tomatoes - (14
  • 1/2 oz) undrained
  • 2 tbsp balsamic vinegar
  • 2 tsp ground cumin
  • 1 tsp coriander seeds
  • 1/2 tsp freshly-ground black pepper
  • 1/4 tsp salt
  • 1 oz uncooked pastina
  • 1 cup water

Method

  • Heat oil in large saucepan over medium heat until hot
  • Add green pepper onion cucumber and garlic; cook and stir until pepper and onion are tender.
