To make Tomato Potato And Basil Skillet, you'll need:
  • 1 tbsp olive oil divided
  • 3 cups sliced potatoes
  • 1/3 cup minced fresh basil
  • 2 whole eggs
  • 2 egg whites
  • 2 tbsp skim milk
  • 1 tbsp Dijon mustard
  • 1 tsp dry mustard
  • 1/2 tsp salt
  • 1/4 tsp freshly-ground black pepper
  • 2 cups sliced plum tomatoes

Method

  • Heat 1 1/2 teaspoons oil in medium nonstick skillet over medium heat until hot
  • Layer half of potato slices in skillet
  • Cover and cook 3 minutes or until lightly browned.
