To make Tri-Colored Rotini Salad, you'll need:
  • SALAD
  • 2 cups cooked tri-colored rotini pasta
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup diced red pepper
  • 1 tbsp sliced black olives
  • 1 can artichoke hearts - (15 oz) drained halved DRESSING
  • 1/4 cup balsamic vinegar
  • 2 tsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tsp minced fresh basil Freshly-ground black pepper to taste

Method

  • Combine all salad ingredients in a large bowl
  • Whisk together the dressing ingredients
  • Pour the dressing over the salad and toss to coat well
  • Serve at room temperature.
