To make Tropical Chicken Salad, you'll need:
  • 2 cups diced cooked chicken breast
  • 2 cups diced fresh pineapple
  • 1 cup mandarin oranges drained
  • 1/2 cup sliced celery
  • 1/2 cup chopped fresh mango
  • 1/4 cup sliced water chestnuts
  • 1/4 cup low-fat mayonnaise
  • 2 tbsp low-fat sour cream
  • 1 tsp coconut extract Salt to taste Freshly-ground black pepper to taste

Method

  • In a large bowl combine the chicken pineapple oranges celery mango and water chestnuts
  • Whisk together the mayonnaise sour cream and extract salt and pepper.
