Ingredients
To make Tuna and Bean Salad, you'll need:
  • 1 red onion
  • 200g can of tuna, drained
  • 400g can butter beans, drained and rinsed
  • 200g cherry tomatoes, halved
  • 2.5 tbsp. olive oil
  • Juice of a lemon
  • 2 tsp. Dijon mustard
  • 30g pack flat-leaf parsley, roughly chopped
  • Salt and pepper to taste

Method

  • Slice the onion as thinly as you can. Place it in a salad bowl and add the tuna, flaking it so there are no large chunks.
  • Mix in the butterbeans and cherry tomatoes.
  • Combine the olive oil, lemon juice and mustard together and season with salt and pepper.
  • Drizzle the dressing onto the salad and serve with a garnish of parsley. 
  • Serve immediately and enjoy!
