Tuna and Bean Salad

Ingredients
To make Tuna and Bean Salad, you'll need:
- 1 red onion
- 200g can of tuna, drained
- 400g can butter beans, drained and rinsed
- 200g cherry tomatoes, halved
- 2.5 tbsp. olive oil
- Juice of a lemon
- 2 tsp. Dijon mustard
- 30g pack flat-leaf parsley, roughly chopped
- Salt and pepper to taste
Method
- Slice the onion as thinly as you can. Place it in a salad bowl and add the tuna, flaking it so there are no large chunks.
- Mix in the butterbeans and cherry tomatoes.
- Combine the olive oil, lemon juice and mustard together and season with salt and pepper.
- Drizzle the dressing onto the salad and serve with a garnish of parsley.
- Serve immediately and enjoy!
