Ingredients
To make Tuna Nicoise, you'll need:
- 4 boiled eggs
- 150g of asparagus tips
- 300g of tuna steaks
- 1.5 tbsp. olive oil
- 100g mixed salad
- 200g sun dried tomatoes
- 25g flat leaf parsley, chopped finely
- Juice and zest of a lemon
Method
- Put the eggs in a saucepan, cover them with water, and bring to the boil.
- Then, lower the heat and hard boil the eggs for 5-7 minutes.
- In a griddle pan, add the asparagus and cook for 5 minutes until they are soft.
- Place the asparagus to one side and run the eggs under cold water, then peel and slice into quarters.
- Heat a griddle pan over a medium heat, then brush the tuna steaks with the olive oil, and cook for 3 minutes on each side.
- Slice the tuna up and place on a plate with eggs, mixed salad, asparagus, and sun dried tomatoes.
- Lay the parsley on top along with the lemon juice and its zest.
- The dish is now ready to serve.
