Veggie Toad in the Hole
Serves: 4
Ingredients
To make Veggie Toad in the Hole, you'll need:
- 600g sweet potato, peeled and diced
- 4 free range eggs
- 100g plain flour
- 175ml semi-skimmed milk
- 2 tbsp. vegetable oil
- 8 veggie sausages
- 2 medium onions, sliced
Method
- Preheat the oven to Gas Mark 6 or 200°C.
- Pour some water into a pan and bring to the boil.
- Pop the sweet potato in the boiling water, then lower the heat, and cook for 7 minutes.
- Once cooked, drain the sweet potato, and mash with a fork.
- Put the eggs, plain flour, and milk in a large bowl and whisk for 4 minutes.
- Pop this mixture in the fridge to chill for an hour.
- Pour the vegetable oil in a frying pan and place over a medium heat.
- Once the oil’s warmed up, fry the sausages for 2 minutes.
- Take the sausages out of the pan, and replace them with the onions.
- Fry the onions until they’re softened, which should take 5-7 minutes.
- Place the sausages in a medium-size ovenproof dish, and pour the batter on top.
- Bake the mixture for 30 minutes.
- Serve with sweet potato mash, peas and gravy and tuck in!
