To make Zesty Lentil Soup, you'll need:
  • 1 onion, roughly chopped 
  • 1 large carrot, peeled and grated 
  • 1 tbsp. olive oil 
  • A pinch of chilli flakes (optional) 
  • 1 tsp. cumin seeds 
  • 3 tbsp. red lentils (or puy) 
  • 1 x 400g tin chopped tomatoes 
  • 300ml vegetable stock 
  • 1 lime, juice and zest

Method

  • Cook the onion and carrot in a little oil for 4 minutes until softened. Add the chilli flakes (if you want to include them) and cumin seeds.
  • Cook for a minute and pop in the lentils, tomato and stock.
  • Simmer for 15-20 minutes until the lentils are soft.
  • Blitz briefly with a stick blender so you have a smooth texture.
  • Stir in the lime juice and zest before serving.
