Ingredients

  • 2 Sweet Potatoes, peeled and cubed
  • 1 large Onio, chopped
  • 2 Zucchini, thickly sliced
  • 5 Tomatoes
  • 15 oz garbanzo beans, undrained
  • 1/2 cup of couscous
  • 1/4 cup of Raisins
  • 1 tablespoon Ground Coriander
  • 1/2 tablespoon Ground Turmeric
  • 1/2 tablespoon Ground Cinnamon
  • 1/2 tablespoon Ground Ginger
  • 1/4 tablespoon Ground Cumin
  • 3 cups of water

Recipe method

Combine all ingredients in a large saucepan. Boil and lower heat, and simmer until the vegetables are tender, about 30 minutes.
