Low carb dinner meal ideas that would suit either dinner or a home cooked lunch as well as alternative methods of cooking rice and potato dishes which opens up many more options.

Moussaka

Moussaka is largely based around aubergine and mince and therefore makes a good low carb dish.

For the topping pick flour with low carbohydrate and high fibre values for best blood sugar results.

Cauliflower Cheese

Cauliflower is a wonderful warm dish which and is a good selectio, particularly if you need extra rather than less calories.

As with the moussaka, pick lower carb flour with higher fibre values.

Roasted vegetables

Roasted vegetables are a very simple idea but also very healthy and satisfying.

The dish is very versatile so you can have fun seeing which combinations of vegetables work best.

Consider including any of the following ingredients:

  • Parsnip
  • Celeriac
  • Peppers
  • Butternut squash
  • Courgettes

Stuffed roasted peppers

Stuffed peppers are another easy and versatile treat. Peppers can be stuffed with mince, cous cous, halloumi cheese, or anything else that may take your fancy.

Instead of potato, you can substitute swede for making mash. Parsnip or carrot can also be added to swede mash to vary the flavour.

Low carb cauliflower rice

Even rice dishes are back on the menu with this little trick.

Cauliflower rice is made by grating or blitzing raw cauliflower and then lightly boiling in a shallow amount of water.

Cauliflower rice means you can enjoy chilli con carne and curries without the high carbohydrate content

Low carb potato substitutes

If you want a similar texture as potato chips, celeriac provides a good alternative and is arguably tastier than potato too.

Similar to potatoes, celeriac can be boiled, roasted or fried.
